I have children that would live the rest of their lives eating PB&J. For the longest time, I pre-made the sandwiches and froze them for quick lunches. The kids switched to hot lunch for a while, but recently, one of my kids took to the brand name un-crusted sandwiches in the freezer section. He was eating 2-3 for breakfast (whatever floats your boat, dude).
Well, the expense is astronomical for single serve, little bitty sandwiches, so the frugal in me decided to give homemade ones a try. Please, read this blog and note all the difficulties! The jury is still out for me, but I feel like this is information for you to know if a) your child refuses to eat crust, b) you hate spending money on the store-bought ones
My second attempt was to put the jelly down first, followed by the peanut butter, and that worked well. The PB held the bread together and it was less likely to go through. I have to admit, I bought cheap, soft bread hoping it would be easier to cut (which it was), but the flip side is that the filling is more likely to come out the top.

For starters, I borrowed the crust cutter/sealer from my brother, who warned me about over stuffing. The first thing I noted was that these little sandwiches will contain virtually no PB or J. My first attempt was a super fail and the filling went everywhere, even though I put just a little in.
Then, I started to fiddle around with the cutting tools. The best method was to use the big ring by itself to cut, then the smaller ring by itself to seal.
So, my hope was that I could make these up ahead of time and store them in the freezer, just like the store bought ones. Enter the food saver! I attempted to vacuum seal two sandwiches at a time. First try, FAIL! Ugh! I did not know there was a gentle mode. Those two little sandwiches were pancaked flat and all the filling was oozing out. The next attempt yielded better results and I have enough 2-packs of UN-crusted breakfast PB&J ready for the next couple of weeks.
