Breakfast Sandwiches To Go!


If you're like me, bustling people out the door every morning, you might realize that you forgot to eat. Or, you have kids who can never seem to get their butts in gear in time to make and eat breakfast. I used to buy prepackaged breakfast sandwiches, but they were expensive and hard to find during COVID times. Those grocery stores sure are picked over!

Instead, I've taken to mass production of breakfast sandwiches, assembly line style. I've tried bagels, muffins and biscuits, as well as eggs, sausage and bacon. My family prefers the combination of english muffin, egg, bacon and Colby jack cheese (although this week it was Kraft slices due to yet another shortage!)

I used to wrap these in plastic wrap and store them in an airtight gallon freezer back, but lately I've taken to my vacuum sealer for all sorts of food prep and preservation. The picture shown is one of my many trials. I did get most of the air out in the one pictured. Some were a fail and others squished that muffin right into oblivion. Note to self, use the gentle setting!

Here's the method I use to mass produce these little suckers. I will warn you, as soon as I find something my kids love and eat, they immediately change their mind and don't like it anymore. Seriously? Right? Am I alone here? I can stock up on cheese crackers that we go through daily and the next day they are over it.

Anyways, let's start with the eggs. When I first tried this, I pan fried one egg at a time. Talk about tedious! Now, I use a big flat griddle pan and cook a dozen eggs at a time on the stovetop. I've been told you can do this in the oven, but I have not tried it! Once the eggs are done, you can carefully cut them into as many squares as you need. I did a dozen eggs here for a dozen sandwiches. Sometimes I make 12 strips and fold them over (you know, so it looks like a fast food sandwich!). It's tough to cook the eggs just right. I almost over overcook, but undercooking is ok, especially if you plan on microwaving them from the freezer!



Once you're rolling, set up an assembly line with your bread, the cheese and/or meat and start making them up! When you've got a sizable pile, you can pack them up for the freezer. Using plastic wrap is ok as long as you put them in a freezer bag, but they can still get some freezer burn. Let them cool before you put them in the freezer to reduce frostiness!

We can pull them out of the freezer and have them ready to eat in no time. Our method is to microwave 30 seconds on each side in the plastic, then transfer to the toaster over to crisp up the top of the bread. It can get sort of soggy from steam inside the plastic. This is the best method to get the egg warm all the way to the middle. My biggest complaint from the kids-"Ew, cold eggs in the middle, ma!" and no one likes over microwaved bread! So we have done all the hard work for you, testing and working out the bugs.
