Breakfast Tailgate!

It's football season here, and we may not be tailgating at an NFL or college game, we do spend a good amount of time at the youth football stadiums in the area! With two boys playing the last few years, we end up getting there early for the first game and staying until the last. It's tough trying to find places to eat and get back in time, so we decided that for away games we would pack the pop up, lawn chairs, wagon and food for the day. It's sort of like camping without the camper. Yes, we haul a lot of stuff, but it's fun to hang around and spend time with our football families, relax for a bit in between games and let the kids play.

I've brought a lot of different tailgate foods, from sandwiches and wraps to crockpots of soup on the chilly days. This upcoming week we have a change of pace and are scheduled for some early games. I have been racking my brain looking for some breakfast type foods. Of course, donuts will have to be on the menu, and maybe a thermos of coffee or OJ! Not having a microwave is tough and I came up with an idea for easy to handle breakfast treats that will stay warm in either my crockpot or my thermal casserole tote.

These bacon-stuffed waffle sticks are really easy to make (don't worry if you don't have a waffle maker, you can do the same thing with pancakes and bacon). I wrapped them in foil packets so that I could either heat them in my oven ahead of time or layer them in my crock pot. Each foil packet has two sticks for easy pickup!

You can make this process go a lot faster with these tips!

  1. Pre-cook and cool the bacon ahead of time. I cook mine up and keep it on hand in the freezer in half strips for all sorts of recipes
  2. Use a boxed waffle mix like Bisquick to save time
  3. Keep a box of pre-cut foil sheets on hand for quick wrap up and to keep foods warm.
