Easier Squash!

 I love butternut squash. It's my favorite hard squash and I absolutely despise preparing it. However, over the years, I've changed my ways and made better squash. When I first started out on my own, I remember calling my mom wondering how the heck I was supposed to cut into this stuff and get the skin off. Back in the old days, I think I used a potato peeler and boiled the chunks. I ended up with the result I was looking for, but I'm surprised I have any fingers left!

As I experimented in the kitchen, I tried microwaving the halves to get the skin off (that was ok) and finally settled on cutting each squash in half and roasting it face down. I did a post years ago about using that handy little scoop loop to get out the seeds. Did you know that a pumpkin carving knife is the best way to cut into these squash! Who knew?! The taste of roasting the squash so much better than boiling. I still added my butter and brown sugar, but I know roasting instead of boiling saved so many more nutrients!



 

This year, I'm going for an even craftier hack. While shopping at Walmart recently, I spotted raw, chunked butternut squash in the produce department. What was this?? A pound of squash that's already been taken care of? I bought a few bags and threw it in the freezer. My plan is to roast it from frozen with a drizzle of olive oil, salt and pepper and proceed with preparing the usual way. I can't wait to give this a try for thanksgiving this year!
