Meal Prep Monday!


I meal prep a lot, but I also get caught in a rut! I find things I like, make up a whole bunch of it, and then get burned out after eating it non stop. I decided to go outside my comfort zone and try something new!

My friend posted her meal the other day and I thought it looked delicious! I have never made a combination of tomatoes, broccoli and mushrooms and I knew it would be easy to make on a sheet pan in the oven with seasonings (I used my Pampered Chef Sweet Basil and olive oil). 

The main dish of the meal was a ranch chicken patty. I couldn't find any ground chicken in the store today, but I did find some turkey. I mixed a pound of turkey, an egg, a half cup of bread crumbs and 2 tablespoons of dry ranch mix to make up 4 good sized patties.


While the veggies were roasting, I put the patties in the air fryer on the magic parchment paper (see link below!) and they cooked up in about 10-12 minutes (flipped once). They had a nice crust and were not dried out!

This is a great new recipe and I am so glad I stumbled upon it. You never know when you're going to find something new, and this one was very easy to do. It's low carb and full of flavor! Give it a try!
